Tasty Tuesday! Turkey Tetrazzini

I made this yummy dish last night for the family and it was a hit!  This was the best way to use all of our leftover turkey from Thanksgiving!  I hope everyone had a wonderful and blessed Thanksgiving with their loved ones.  x0x0

Preheat Oven to 400 degrees.

Boil your noodles

Dice Left over Turkey ( at least 3 cups)

Step 2

Lightly brown mushrooms and onions in olive oil.

Step 3

Stir in flour and cook until bubbly.

Step 4

Stir in the broth and milk.   Cook, stirring often until mix boils.

Step 5

 

Place a layer of noodles in a lightly greased 9×13 pan.

Step 6

Mix remaining noodles with sauce and turkey and pour mixture over layer of noodles.

Step 7

Sprinkle with cheese (I did not have any cheese on hand to grate, so I used sliced cheese)

Bake uncovered for approximately 20 minutes.  Enjoy!!

Ingredients1/2 c. sliced mushrooms (optional, but I add them)
1/2 c. sliced onions
4 tablespoons of 0live oil (or 1/4 c. butter or margarine)
1/4 c. flour
2 c. chicken broth
1 c. 1/2 & 1/2 (or milk of your choice i.e. almond milk)
1 tsp salt
1/4 tsp pepper
1 lb. pkg spaghetti noodles (or whatever you have), cooked, drained
3 c. cooked, diced turkey
1 c. shredded cheddar cheese, more if you like yours really cheesy

InstructionsPreheat oven to 400 degrees.

Stir in flour. Cook until bubbly. Stir in the broth and milk.
Add salt & pepper. Cook, stirring often until mix boils.
Place a layer of noodles in a lightly greased 9×13 pan.
Mix remaining noodles with sauce and turkey. Sprinkle with cheese.
Bake at 400 degrees for 20 mins or until bubbly.
This can be made ahead and refrigerated until baking time.

Opening Day of my Blog!

I have been thinking for a long time about starting a blog about my running and fitness journey.  Today is the day, and I am excited to use my blog as a space for me to share several of my passions. These include running, fitness, cooking, baking, and living a healthy lifestyle.  I am a Mom of 4 beautiful children, and I strive daily to lead by example, hoping that my children will see the importance of living a healthy and active lifestyle.  Although I have always made fitness a part of my lifestyle, I took up the sport of running exactly 1 year ago, November 2013.  In this one year, I have ran 4 Half Marathons, 5K, 15K, and 10K races. I am currently training for the New Orleans Rock n Roll Marathon (1/25/15), which will be my FIRST Full Marathon!!  I have completely fallen in love with running and I know in my heart I will always be a runner.  Running has completely changed my life in ways that one may not understand unless they experience running as a lifestyle themselves.  It’s hard to believe that I actually hated running until I dedicated myself to train for my first Half Marathon. Training for that Half Marathon (Dallas Rock n Roll 2/14) turned me into a Running Fanatic!

I have big goals for 2015 and I already have the best goal that many runners have and have already accomplished:  to qualify for The Boston Marathon.  I have a long ways to go, this I know.  In TWO years (when I turn 45), I need 3:55 to qualify my friends.  I will do this!  I hope you will follow me in my journey and find inspiration in some way for your life!
